In 1995, Jacopo visited Château Lafite Rothschild, the most prestigious winery in the Médoc region, imagining one day using its grape pomace to make Grappa. This seemingly unattainable dream took a turn for the better 12 years later. In late October 2007, trucks loaded with Château Lafite Rothschild grape pomace drove straight to the POLI distillery, traveling overnight to distill the freshest and most precious ingredients, creating this Italian brandy with French roots.
In late October/early November 2007, Andrea and Jacopo eagerly began distillation, marking a significant milestone: the first time in history that Grappa was made from the finest French grape pomace in Italy.
In late April 2008, the distilled Grappa underwent approximately six months of aging in stainless steel tanks before being transferred to 11 top-quality oak barrels crafted by Château coopers for further aging.
After a long and patient 21-year wait, in June 2016, the dream came true. The first premium Grappa made from grape pomace from a top French winery, named POLI LA PREMIÈR, was officially bottled and sold.
It is made from grape pomace from Merlot, Cabernet, and Petit Verdot at Château Lafite Rothschild, using a non-continuous copper steam still, and then aged for eight years in Château Lafite Rothschild oak barrels, resulting in this premium Italian brandy with French heritage.
Due to the complexity of the production process, this collaboration with Château Lafite Rothschild was a one-time event and will never be repeated.
