Torcolato, a renowned and representative sweet wine from the Breganze region of Italy, symbolizes the winemaking history of the region. At one time, there were about ten wineries in Breganze licensed to produce DOC-level wines, and they exclusively authorized POLI to use all the grape pomace used for Torcolato production to make Grappa Amorosa di Dicembre.
The highest quality Vespaiolo grapes are tied to wooden structures and air-dried at the end of September each year for complete aging. Once all the internal moisture has evaporated, the resulting dried grapes have a concentrated sweetness and are then used to make Torcolato. The dried grape pomace for Torcolato looks just like raisins, and the biggest challenge in the process is removing the grape stems! Because the stems produce unpleasant aromas during processing, removing them is absolutely essential. POLI experimented with various methods before ultimately choosing a manual process. Around the end of December each year, POLI begins distillation using a non-continuous steam still, followed by 12 months of settling in stainless steel tanks, resulting in Amorosa di Dicembre, a fragrance with a unique dried fruit aroma.
The handcrafted glass bottle is meticulously designed and crafted with the concept of a still in mind, featuring copper wire wrapping that exudes exceptional elegance.
