Bonito Gin

Using bonito that migrate with the Kuroshio Current to the waters off Hualien every summer as the main ingredient,
and combining that with locally grown Kaffir lime leaves (Thai lemon leaves), juniper berries, and other spices
all infused and distilled with rice-based liquor.
When first inhaling the scents, the fresh aroma of the Kaffir lime leaves will be the first to greet your nose. As the top note, the taste is characterized by a lemon citrus scent.
In the middle, there is a woody tone of shell ginger, and in the base, there is the smokiness of smoked bonito.
Ｗhen making Gin Tonic or used to prepare an Ocean Martini with olive brine, the combination of the refreshing aroma, oceanic freshness, and salty sensation will feel like a pleasant breeze flowing from the Pacific Ocean.
